A 90-minute journey into the world of tea pairing, guided by a professional tea sommelier with hands-on experience in the gastronomy scene since 2021.

Agroecological tea from Misiones, Argentina: History and Tasting Journey
This 60-minute session begins with an introduction to the history of tea cultivation in Misiones, Argentina, followed by a guided tasting of three teas — black, green, and white — each with its own character and terroir.
The workshop is led by Mirna Screpante, a certified Tea Master with the Global Japanese Tea Association. Through her project Southern Tea Leaves and her training in Japan, China, Taiwan, and Korea, she combines deep expertise with a personal passion for introducing the unique terroir of the southern hemisphere, and bringing Argentina’s distinctive agroecological teas to European audiences.

A curated, sensorial journey through five exceptional oolong teas from my personal collection, each paired with an artisan chocolate infused with the very same tea.
This workshop celebrates the harmony between tea and cacao — exploring how texture, terroir, and aroma interact on the palate. Participants will discover how the layered character of oolong enhances and transforms the chocolate-tasting experience.

Tea Leaf Dyeing Workshop: Dye Fabric and Paper with Reused Tea Leaves by Yurika Saito
Explore the traditional cultures of tea and dyeing in this hands-on workshop that reuses spent tea leaves to discover new creative possibilities with tea leaves and circulation.
Participants will dye fabric and paper using a Japanese tea-dyeing technique that is rare in Berlin, led by textile artist Yurika Saito, who has conducted many natural dye workshops across Germany.
    The
    resulting tea-dyed fabrics and decorative items can be used as
    everyday items, tea cloths, or art pieces.
    This is a
    valuable opportunity to experience a unique craft firsthand.
    Throughout the process, engage all five senses for a mindful,
    slow-paced experience.

Quality of tea in sensory perception
There is no noteworthy discourse in the Western world on the topic of sensory tea quality — understood here as the overall sensory impression of tea. Approaches to this subject vary widely: they range from trained tasting panels striving for scientific objectivity, to experience-based evaluation criteria, to spiritual or intuitive dimensions.
This talk is an attempt to situate and contextualize this complex and often controversial topic. Rather than proposing a definitive definition of quality, it aims to present a range of perspectives, highlight their implications, and open space for reflection and exchange.
The question of method remains open — the focus lies on mapping existing approaches and initiating a dialogue about how sensory quality is perceived, evaluated, and negotiated.

Yunnan ist die vielfältigste Region Chinas und die Wiege des Tees.
Gemeinsam entdecken wir das ursprüngliche Yunnan durch zwei seiner größten Schätze – die einzigartigen Tees und die regionale Küche. Wir begeben uns auf die Spuren der legendären Tee-Pferde-Straße und der historischen Yunnan-Vietnam-Bahnstrecke.
Wir, das sind Yuhang Wu und Jonas Borchers, eure kulinarischen Guides von UUU Berlin, sowie Yi Yuan und Yunhui Ma, gebürtige Yunannerinnen, erfahrene Tee-Expertinnen und Gründerinnen des Berlin Tea Festivals und von Wild Mountain Tea.
Gemeinsam vereinen wir tiefgehendes lokales Wissen und fundierte Fachkenntnisse, um euch die facettenreiche Küche Yunnans und die schöne Welt des Tees näherzubringen. Diese Reise macht die reiche Kultur, die beeindruckende Natur und die unvergleichlichen Aromen Yunnans erlebbar – ein Erlebnis, das euch lange in Erinnerung bleiben wird!
White Tea Tasting Competition
This year, we will organize one event in each day, the White Tea Tasting Competition of the China Tea Competition Association. This competition is a very famous tea competition in China, and tea professionals from all over China can participate. They could use their professional sensory evaluation knowledge to judge which teas have more outstanding aroma, taste, and other aspects among the ten teas. We hope to introduce it to Europe, so that European tea enthusiasts can also experience the fun of this type of tea competition and learn more about Chinese tea knowledge through practice.
The Way of Teaware: Materials, Forms, and the Secrets of Flavor
In Taiwanese tea culture, teaware is more than a vessel — it is the hidden ingredient that shapes every cup. From clay teapots that mellow and deepen flavors, to porcelain cups that reveal pure clarity, and glass gaiwan(“蓋碗”, literally translates “lidded bowl”) that showcase the beauty of tea leaves, each material and form creates a unique experience. This session will guide you through the artistry and function of traditional Taiwanese teapots, cups, and gaiwan, revealing how design influences aroma, taste, and appreciation. Attendees will also enjoy a live tasting, discovering firsthand how the same tea can express itself in entirely different ways through the teaware used.

How Wild Orchard’s Regenerative Farming Returns to Tea’s Roots
With Wild Orchard Teas being one of the most exciting tea projects in the agricultural space right now, this session will highlight the efforts of Wild Orchard to (re) integrate the ‘old ways’ of bio-dynamic and regenerative principles into tea’s present and future from reconstituting the soils to reenergizing entire communities.
In the words of Wild Orchard tea cultivator and maker, Mr. Jeong, “Good tea starts with good soil and good environment. It is that simple”.
Fuchs will highlight and link in his own living and exploring and documenting in Yunnan province and a recent visit and stay at Wild Orchard’s Jeju Island gardens and how many of the old ways of tea cultivation within the ancient tea forests of Yunnan mirror each other. He will explore the importance of revisiting some of the traditional agricultural practices and how Wild Orchard has managed to re-energize communities and the soil, all while creating award-winning teas.
An informal and provocative mix of old ways and views and new paths.
Teas with a Story – A Sneak Peek into Eduard

In this workshop, Eduardo will share a first look into Eduard/, a new Berlin-based tea project launching in January. Eduard/ is about quality, relationships, and curiosity — a bridge between origin and urban life, between tradition and the contemporary. Participants will hear the first stories behind the project and taste two upcoming teas — a sensory preview of what’s to come.
